Salzburger Nockerl (Austria)
Salzburger Nockerl (known as Solzburga Noggal in Austria) are a sweet souffle served as a dessert, though is so filling it can double as a main course. The dish is a culinary specialty in the Austrian city of Salzburg. Salzburger Nockerl are essentially dumplings made of egg yolk, flour, sugar and vanilla mixed together to create a thin dough. Egg whites are whisked until stiff and folded carefully into the dough. The dumplings (nocken) are formed and baked on low heat in an oven. Salzburger Nockerl are always served fresh and warm with powdered sugar and may sometimes include raspberry sauce. The dish was designed to represent the hillsides surrounding the city; the powdered sugar representing the snow-covered peaks.
